Pancakes packed with protein and honey & cinnamon flavour!

Ingredients

2 eggs

1 scoop protein powder OR 1/2 cup almond meal

1 tsp cinnamon

1 tsp maple syrup

1 tbsp ground flaxseed/LSA mix/chia seeds – for the fibre hit!

3 tbsp almond milk

½  banana, mashed

1 tsp baking powder (optional)

Handful berries, ¼ cup five:am honey & cinnamon yoghurt, granola or orange slices to serve

1 tsp coconut oil – for the cooking

Method

  1. Whisk the above ingredients in a bowl, except for the coconut oil and toppings.
  2. Heat a non-stick pan over medium heat and melt coconut oil.
  3. Pour batter into pan and cook one side until you see bubbles starting to form.
  4. Flip carefully and cook other side. Remove from pan.
  5. Top with berries, five:am honey & cinnamon yoghurt, granola or orange slices.
